Trimble, we need to talk to you for a minute. Not as a business. As your neighbors.
Nine days ago we unlocked the door for the first time and had no idea what to expect. What we got was a line of trucks before sunrise, church crowds on Sunday, kids pressing their faces against the window, and more hugs and handshakes than we can count. You didn’t just support us. You adopted us.
So we owe you honesty.
Starting this week, Tilly’s will be closed on Mondays and Tuesdays for the next month or so. We’ll be open Wednesday through Sunday, same hours, same faces, same coffee.
Here’s why. Our crew is small, and they are the heart of this place. For nine straight days they have been here before the sun and long after the last cup, running on grit and not much else. Every one of you who has come through that line has met them. You know they’d never say a word about it. That’s exactly why we have to say it for them. We will not build this shop on the backs of exhausted people. That’s not the kind of place we want to be, and it’s not the kind of place you’d want to come to.
We’ve all been part of small town restaurants for a long time, and we’ve watched good ones close for one reason: they tried to do everything at once and ran themselves into the ground. We are not going to let that happen to Tilly’s. Not here. Not with how much this town has already given us.
So we’re taking two days a week to catch our breath, train, fine tune the menu, and fix the little things you can only fix when the line isn’t out the door. We’d love to be open seven days. Honestly, we’d love to be open around the clock. And the only thing between us and that is more good people. If you or someone you love wants to be part of this, come in and talk to us. We’re hiring, and we’re looking for folks who care the way you’ve shown us this town cares.
We know a closed sign on a Monday morning is a disappointment. We feel it too. But this is us planting roots, not pulling them up. This is how Tilly’s becomes the place your grandkids stop at.
We’ll see you Wednesday. Coffee’s on us for the first few folks in line.
With all our gratitude,Chad and the Tilly’s Family
